Taiwanese food and sherry wine / Hudson Valley, New York

While hosting friends from NYC one very hot summer weekend, we shared tapas at Mirador in Kingston - where I currently reside in the Hudson Valley. Upon tasting a Spanish sherry flight, it dawned on me that it’d be the perfect pairing to Taiwanese food given that shao xing (fermented rice wine) has such similar notes, and that both countries are very, very pork obsessed. One conversation led to another and Nick Africano, owner of Mirador, and I merged our palettes together to create this special experience.
